Both of these settings can be changed through the config editor. The config editor is called ConfigEditorGUI located in c:\Program Files\ExamWritePad (as below).
There is a json file in here too called ExamWritePadSettings.json which contains all the program settings.
The IT Admin needs to copy the json file somewhere editable like the desktop, then open the Config Editor and open the json file within it.
To change both DefaultBackupPath and DefaultSavePath go to each option in the left (it can be searched using the filter options) then add the desired path in the Current Value text field. Then save the new settings. This json file can then be pushed out to machines to change the defaults as per instructions here.
